  1. Mix flour, salt, yeast. Add water, stir until shaggy dough forms.
  2. Cover, let rise at room temp 12-18 hours.
  3. Turn dough onto floured surface. Fold edges to center, flip seam-side down.
  4. Place on parchment-lined baking sheet. Cover, let rise 1-2 hours.
  5. Preheat oven to 450°F with Dutch oven inside.
  6. Carefully transfer dough to hot Dutch oven. Cover.
  7. Bake covered . Uncover, bake 15-20 more until deep golden.
  8. Cool completely before slicing.

Notes

  • Long rise develops complex flavor.
  • Dutch oven creates steam for crusty crust.
  • Cool completely or crumb will be gummy.
