Cottage Cheese Flatbread

The viral flourless version: cottage cheese, eggs, an oven.

  • 1 cup (225g) full-fat cottage cheese
  • 2 large eggs
  • 1/4 tsp Diamond Crystal kosher salt (a pinch of table salt)
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp Italian herbs or everything bagel seasoning (optional)

  1. Preheat oven to 350°F (175°C). Line a sheet pan with parchment and mist the parchment lightly with oil - this thing loves to stick.
  2. Blend cottage cheese, eggs, salt, and seasonings until completely smooth, about 30 seconds. Lumps bake into rubbery pockets.
  3. Pour onto the parchment and spread into a thin rectangle, roughly 8x11 inches and 1/4 inch thick. Thinner at the edges = burnt lace; keep it even.
  4. Bake until golden brown across the surface and fully set in the center - the eggs should be completely cooked with no wet sheen (an instant-read in the middle will read 160°F+).
  5. Cool , then peel off the parchment. Warm, it's flexible enough to fold and roll.
  6. Use as a wrap, or top like a pizza and broil until the cheese melts.

Notes

  • Full-fat cottage cheese only. Nonfat weeps water and bakes up rubbery.
  • This is not bread and won't fool anyone who's had bread. It IS a genuinely useful low-carb, high-protein wrap that holds fillings without cracking.
  • Want an actual chewy flatbread instead? The pre-viral 2-ingredient dough version: blend 1 cup (225g) cottage cheese smooth, mix with 1/2 cup (60g) all-purpose flour and 1/4 tsp salt into a sticky dough, roll thin with plenty of flour, and cook in an oiled skillet 2-3 minutes per side. More carbs, more bread.

When it goes wrong

  • Stuck to the parchment → you skipped oiling it, or peeled while piping hot; grease the paper and give it 5 minutes.
  • Wet, eggy middle → underbaked or spread too thick; it needs to be golden and set edge to edge.
  • Rubbery texture → nonfat cottage cheese or unblended lumps; use full-fat and blend fully smooth.
  • Cracks when rolled → overbaked or rolled cold; wrap while still warm.
