  1. Beat the softened butter with a hand mixer (or stand mixer, whisk attachment) for until creamy.
  2. Add honey, powdered sugar, cinnamon, and salt. Beat , scraping down once, until pale, fluffy, and visibly whipped - it should hold soft peaks like frosting.
  3. Serve at room temperature. Refrigerate leftovers up to 2 weeks; let it come back to room temp (or re-whip 30 seconds) before serving.

Notes

  • The whip is the recipe. Stirred-together ingredients taste the same but spread like cold spackle - the airiness is the Roadhouse texture.
  • Salted butter works: drop the added salt.
  • Also correct on: pancakes, cornbread, sweet potatoes, toast, a spoon.

When it goes wrong

  • Grainy → butter wasn't soft enough to emulsify; let it warm and re-whip.
  • Separated or greasy → over-whipped in a warm kitchen; chill 10 minutes and whip briefly.
  • Too sweet → that's the recipe; halve the powdered sugar next time and it's still right.
