  1. Pat wings dry. Toss with baking powder and salt.
  2. Arrange on wire rack over sheet. Refrigerate uncovered overnight.
  3. Bake at 450°F for . Flip, bake 20-30 more until crispy.
  4. Melt butter, whisk in hot sauce, vinegar, Worcestershire.
  5. Toss hot wings in sauce.
  6. Serve with blue cheese and celery.

Notes

  • Baking powder + overnight = crispy without frying.
  • Don't skip overnight rest.
  • Frank's is classic; adjust heat with more/less sauce.
