- Preheat oven to 400°F.
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken skin-side down. Cook until skin is golden and crispy. Flip and cook more. Remove to a plate.
- Reduce heat to medium. Add garlic and cook 30 seconds until fragrant.
- Whisk in honey, soy sauce, rice vinegar, and sriracha (if using). Bring to a simmer.
- Return chicken to the skillet, skin-side up. Spoon sauce over the chicken.
- Transfer to oven. Bake until chicken reaches 165°F, basting with sauce halfway through.
- Let rest . Garnish with sesame seeds and green onions. Serve with rice.
Notes
- Crispy skin: Don't move the chicken while it's searing. Let it sit undisturbed to crisp.
- Boneless option: Use boneless thighs and reduce oven time to 10-12 minutes.
- The sauce: It thickens as it cools. Add a splash of water when reheating leftovers.
- Make it hotter: Add more sriracha or a few dashes of red pepper flakes.
- Meal prep friendly: Stores well for 4 days. Reheat in the oven to keep skin crispy.
