Buttermilk Biscuits

  • 2 cups flour
  • 1 tbsp baking powder
  • ¼ tsp baking soda
  • 1 tbsp sugar
  • 1 tsp salt
  • 6 tbsp cold butter, cubed
  • ¾ cup cold buttermilk

Instructions

  1. Preheat oven to 425°F.
  2. Whisk flour, baking powder, baking soda, sugar, salt.
  3. Cut in cold butter until pea-sized pieces remain.
  4. Add buttermilk. Stir until just combined.
  5. Pat to 1-inch thick. Fold in half. Repeat twice.
  6. Pat to 1-inch thick. Cut with 2.5-inch cutter. Don't twist.
  7. Place on sheet, sides touching.

Notes

  • Cold butter is essential.
  • Don't twist cutter - seals edges.
  • Biscuits touching rise higher.
