Yogurt Tiramisu

- 2 cups (450g) full-fat Greek yogurt (5% - this is not the place for 0%)
- 3 Tbsp maple syrup or honey
- 1 tsp vanilla extract
- Pinch of fine salt
- 3/4 cup (180ml) strong brewed coffee or espresso, cooled
- 1 tsp cocoa powder plus more for dusting
- 28-32 Biscoff cookies (about 1 1/2 packs) or 18 ladyfingers
- Dark chocolate, for grating (optional)
Instructions

- Stir yogurt, maple syrup, vanilla, and salt until smooth. Taste - it should be just sweet enough, not dessert-sweet; the cookies bring plenty.
- Pour the cooled coffee into a shallow bowl.
- Dunk cookies one at a time, 1-2 seconds per side - in and out. Biscoff dissolves fast.
- Lay a layer of dunked cookies in an 8x8 dish. Spread half the yogurt over them.
- Repeat: dunked cookies, remaining yogurt. Smooth the top.
- Cover and refrigerate at least 6 hours, ideally overnight. The cookies soften into cake and the layers set.
- Dust generously with cocoa (and grated chocolate if using) just before serving.
Notes
- Overnight is the recipe. At hour two it's cookies and yogurt; at hour twelve it's tiramisu.
- Full-fat yogurt reads as cream. Low-fat reads as breakfast.
- Real-deal upgrade: fold 1/2 cup whipped cream into the yogurt for a lighter, richer layer.
When it goes wrong
- Soggy sludge layer → cookies dunked too long; two seconds means two seconds.
- Tastes like plain yogurt → underchilled or unsalted; overnight, and don't skip the pinch of salt.
- Runny layers → thin yogurt; use thick Greek 5%, or strain regular yogurt an hour in a coffee filter.
- Bitter top → cocoa dusted too early absorbs moisture and clumps; dust at serving time.
