Peach Cobbler

Juicy fruit, biscuit topping

Ingredients

  • Filling: 3 lbs ripe peaches sliced, ½ cup sugar, 1 tbsp cornstarch, 1 tsp vanilla, ¼ tsp almond extract
  • Topping: 1½ cups flour, ⅓ cup sugar + extra, 1½ tsp baking powder, ¼ tsp salt, 6 tbsp cold butter cubed, ½ cup heavy cream

Instructions

  1. Preheat oven to 375°F.
  2. Toss peaches with sugar, cornstarch, extracts. Pour into 9x13 dish.
  3. Whisk flour, sugar, baking powder, salt. Cut in butter until pea-sized.
  4. Add cream, stir until just combined.
  5. Drop biscuit dough over filling in mounds. Sprinkle with sugar.
  6. Bake until golden and bubbling, .
  7. Serve warm with vanilla ice cream.

Notes

  • Ripe peaches are essential.
  • Don't spread dough - leave it chunky.
