Crispy Waffles

Crispy outside, fluffy inside. The cornstarch is the secret.

Ingredients

  • 2 cups all-purpose flour
  • ¼ cup cornstarch
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 tbsp sugar
  • 2 eggs, separated
  • 2 cups milk
  • ½ cup vegetable oil
  • 1 tsp vanilla

Instructions

  1. Preheat waffle iron.
  2. Whisk flour, cornstarch, baking powder, salt, and sugar.
  3. In another bowl, whisk egg yolks, milk, oil, and vanilla.
  4. Beat egg whites to stiff peaks.
  5. Pour wet into dry, stir until just combined.
  6. Fold in egg whites gently—lumps are okay.
  7. Cook according to your waffle iron instructions.
  8. Serve immediately for maximum crispness.

Notes

  • Cornstarch = crispy: It's the secret to that crunch.
  • Whipped whites = fluffy: Don't skip this step.
  • Don't stack: Keep waffles on a wire rack in warm oven to stay crispy.
