Crispy Waffles
Crispy outside, fluffy inside. The cornstarch is the secret.

- 2 tbsp sugar
- 2 eggs, separated
- 2 cups milk
- ½ cup vegetable oil
- 1 tsp vanilla
Instructions

- Preheat waffle iron.
- Whisk flour, cornstarch, baking powder, salt, and sugar.
- In another bowl, whisk egg yolks, milk, oil, and vanilla.
- Beat egg whites to stiff peaks.
- Pour wet into dry, stir until just combined.
- Fold in egg whites gently—lumps are okay.
- Cook according to your waffle iron instructions.
- Serve immediately for maximum crispness.
Notes
- Cornstarch = crispy: It's the secret to that crunch.
- Whipped whites = fluffy: Don't skip this step.
- Don't stack: Keep waffles on a wire rack in warm oven to stay crispy.
