French Omelette

  1. Beat eggs with fork until just combined. Season.
  2. Heat 8-inch nonstick skillet over medium-high. Add butter.
  3. When foam subsides, add eggs.
  4. Stir eggs with fork while shaking pan. Small curds form.
  5. When mostly set but still wet on top, stop stirring.
  6. Add fillings if using.
  7. Tilt pan and roll omelette onto plate.
  8. Should be pale yellow outside, creamy inside.

Notes

  • Practice makes perfect.
  • Don't let it brown.
  • Entire process takes under 2 minutes.
