  1. Heat wok until smoking. Add 1 tbsp oil. Stir-fry pork until cooked, . Transfer out.
  2. Add 1 tbsp oil. Scramble eggs, break into pieces. Transfer out.
  3. Add remaining oil. Stir-fry garlic 30 seconds.
  4. Add rice, press flat. Let sit 30 seconds, then stir. Repeat until hot and crispy.
  5. Add peas, cook . Return pork and eggs. Add soy sauce, toss.
  6. Drizzle with sesame oil, add scallions and white pepper.

Notes

  • Char siu is traditional.
  • Day-old rice is essential.
