Ingredients

  • 2 packs Samyang buldak ramen (original or carbonara flavor)
  • 2 large egg yolks
  • 40g (1/2 cup) finely grated parmesan
  • 1/4 cup (60ml) heavy cream
  • 1 Tbsp butter
  • 1-2 cloves garlic, minced
  • 2 green onions, sliced
  • Toasted sesame seeds

Instructions

  1. Boil the noodles (discard nothing yet - you need the water). Reserve 1/2 cup noodle water, then drain.
  2. Whisk egg yolks, parmesan, and cream in a bowl. This is your rescue squad.
  3. Melt butter in the empty pot over medium-low, cook garlic 30 seconds until fragrant, not brown.
  4. Add drained noodles, ONE sauce packet (start there - two is a commitment), and a splash of noodle water. Toss to coat.
  5. Kill the heat. Wait 30 seconds - a raging-hot pot scrambles the yolks.
  6. Pour in the yolk mixture, tossing constantly, adding noodle water a splash at a time until the sauce turns glossy and clings.
  7. Top with green onions, sesame seeds, and the flavor-flake packet if your pack has one.

Notes

  • The heat math: one packet with the dairy lands around 'very spicy but conversational.' Two packets is the full 2x challenge with a cream buffer.
  • Off the heat is the whole technique - carbonara logic applies whether it's guanciale or fire sauce.
  • The buldak 'carbonara' flavor pack is fine, but building it from original + real yolk and parmesan tastes dramatically better.

When it goes wrong

  • Scrambled, grainy sauce → pot was still screaming when the yolks went in; off heat, 30 seconds, keep tossing.
  • Sauce too thick and gluey → needs noodle water; loosen a splash at a time.
  • Inedibly hot → you used both packets; next time start with one and add.
  • Sauce won't cling → pre-grated shelf parmesan doesn't melt; grate a wedge.
