Air Fryer Chicken Thighs

- 4 bone-in, skin-on chicken thighs
- 1 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- 1 tsp Diamond Crystal kosher salt (halve for table salt)
- 1/2 tsp black pepper
Instructions

- Pat chicken thighs completely dry with paper towels. This is crucial for crispy skin.
- Mix garlic powder, paprika, onion powder, thyme, salt, and pepper in a small bowl.
- Rub chicken with olive oil, then coat generously with spice mixture on all sides.
- Place chicken skin-side down in air fryer basket. Don't overcrowd - cook in batches if needed.
- Air fry at 380°F (190°C) for .
- Flip chicken skin-side up. Increase to 400°F (200°C) and cook until skin is golden and crispy. Pull when internal temp reads 175-185°F at the thickest part, probe not touching bone.
- Let rest before serving.
Notes
- Why 175-185°F, not 165°F? 165°F is only the safety floor. Thighs are loaded with collagen and connective tissue that doesn't melt into gelatin until well past that - pull at 165°F and they're safe but chewy. 175-185°F is where thighs actually get tender.
- Starting skin-side down renders the fat, then flipping crisps it up.
- Don't skip the drying step - wet skin = soggy skin.
When it goes wrong
- Soggy skin → chicken wasn't dried or thighs were crowded and steamed each other; pat bone-dry and cook in batches.
- Chewy meat at 165°F → underdone for a thigh, not overdone; keep cooking to 175-185°F so the collagen melts.
- Thermometer reads high but meat feels tough → probe was touching bone; re-check in the thickest pocket of meat.
- Smoking air fryer → rendered fat pooling below; add 1-2 Tbsp water to the drawer under the basket.
