White Chicken Chili

Creamy, warming, and lighter than red chili.

Ingredients

  • 1 lb chicken breast
  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 cans 15oz white beans, drained
  • 4 cups chicken broth
  • 2 cans 4oz green chiles
  • 1 tsp cumin
  • ½ tsp oregano
  • ¼ tsp cayenne
  • 4 oz cream cheese
  • Sour cream, cilantro, lime for serving

Instructions

  1. Season chicken with salt and pepper. Sear in oil until cooked through. Remove and shred.
  2. Sauté onion until soft. Add garlic, cook .
  3. Add beans, broth, chiles, cumin, oregano, cayenne. Bring to simmer.
  4. Cook . Mash some beans against the pot to thicken.
  5. Stir in cream cheese until melted. Add shredded chicken.
  6. Simmer .
  7. Serve topped with sour cream, cilantro, and lime.

Notes

  • Rotisserie chicken: Great shortcut—use 3 cups shredded.
  • More heat: Add diced jalapeño with the onion.
  • Even better next day: Flavors meld overnight.
