Marry Me Chicken
Creamy sun-dried tomato sauce so good it allegedly inspires proposals.

- 4 boneless skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 3 Tbsp olive oil, divided
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1/4 cup fresh basil, chopped
- 1 tsp red pepper flakes (optional)
Instructions

- Pound chicken breasts to even thickness (about 3/4 inch). Season both sides with salt, pepper, Italian seasoning, and paprika.
- Heat 2 Tbsp olive oil in a large skillet over medium-high heat. Sear chicken per side until golden and cooked through (165°F). Remove and set aside.
- Reduce heat to medium. Add remaining olive oil, garlic, and sun-dried tomatoes. Sauté until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom. Let simmer .
- Stir in heavy cream and parmesan. Simmer until sauce thickens slightly.
- Return chicken to the skillet. Spoon sauce over chicken and simmer to let flavors meld.
- Top with fresh basil and red pepper flakes if using. Serve immediately.
Notes
- The sauce: Don't skip scraping the browned bits—that's where the flavor lives.
- Sun-dried tomatoes: Use oil-packed for more flavor. Drain well before chopping.
- Serve with: Pasta, crusty bread, rice, or mashed potatoes to soak up the sauce.
- Make it lighter: Use half-and-half instead of heavy cream.
- Storage: Refrigerate up to 3 days. Reheat gently to avoid breaking the sauce.
