Marry Me Chicken

Creamy sun-dried tomato sauce so good it allegedly inspires proposals.

  • 4 boneless skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 3 Tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup fresh basil, chopped
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Pound chicken breasts to even thickness (about 3/4 inch). Season both sides with salt, pepper, Italian seasoning, and paprika.
  2. Heat 2 Tbsp olive oil in a large skillet over medium-high heat. Sear chicken per side until golden and cooked through (165°F). Remove and set aside.
  3. Reduce heat to medium. Add remaining olive oil, garlic, and sun-dried tomatoes. Sauté until fragrant.
  4. Pour in chicken broth, scraping up any browned bits from the bottom. Let simmer .
  5. Stir in heavy cream and parmesan. Simmer until sauce thickens slightly.
  6. Return chicken to the skillet. Spoon sauce over chicken and simmer to let flavors meld.
  7. Top with fresh basil and red pepper flakes if using. Serve immediately.

Notes

  • The sauce: Don't skip scraping the browned bits—that's where the flavor lives.
  • Sun-dried tomatoes: Use oil-packed for more flavor. Drain well before chopping.
  • Serve with: Pasta, crusty bread, rice, or mashed potatoes to soak up the sauce.
  • Make it lighter: Use half-and-half instead of heavy cream.
  • Storage: Refrigerate up to 3 days. Reheat gently to avoid breaking the sauce.
