- Combine honey, hot sauce, red pepper flakes, and cayenne (if using) in a small saucepan.
- Heat over low heat for , stirring occasionally. Don't let it boil.
- Remove from heat and stir in apple cider vinegar.
- Let cool slightly, then taste and adjust heat level.
- Transfer to a jar. Store at room temperature up to 1 month.
Notes
- Heat levels: Start with 2 Tbsp hot sauce and add more to taste. You can always add heat, can't take it away.
- Fresno or serrano: For a fresher kick, slice 1-2 fresh chilis and simmer them in the honey instead of hot sauce.
- Best on: Pizza (especially pepperoni), fried chicken, biscuits, bacon, cheese boards, vanilla ice cream.
- Vinegar: Adds depth and cuts the sweetness. Don't skip it.
- No-cook version: Just whisk ingredients together without heating. Flavor won't meld as well but works in a pinch.
