Reliable weeknight chili. Stovetop or slow cooker.

Ingredients

  • 46 oz tomato juice
  • 29 oz tomato sauce
  • 15 oz kidney beans, drained
  • 15 oz pinto beans, drained
  • 1½ cups onion, chopped
  • ¼ cup bell pepper, chopped
  • ¼ cup chili powder
  • 1½ tsp cumin
  • 1 tsp salt
  • ½ tsp oregano
  • ½ tsp black pepper
  • ½ tsp sugar
  • ⅛ tsp cayenne

Instructions

  1. Brown ground beef in a large skillet over medium-high heat until no pink remains, about . Drain the fat.
  2. Transfer beef to a large pot. Add tomato juice, tomato sauce, both beans, onion, bell pepper, and all spices. Stir to combine.
  3. Bring to a boil over high heat. Reduce to low and simmer uncovered for 1½ hours, stirring occasionally, until thickened.
  4. Taste and adjust salt. Serve with your preferred toppings.

Notes

  • Slow cooker: Brown beef first, then combine everything on low for 8–10 hours.
  • Too thin? Swap tomato juice for crushed tomatoes, or simmer uncovered longer.
  • Storage: Keeps 5 days refrigerated. Freezes well for 3 months.
