  1. Season and cook chicken in oil until golden, per side. Rest, then slice.
  2. Cook pasta until al dente. Reserve 1 cup pasta water.
  3. Melt butter, add garlic, cook 30 seconds. Add cream, simmer .
  4. Off heat, gradually stir in Parmesan until melted.
  5. Add pasta, toss. Add pasta water for silky consistency.
  6. Season with nutmeg, salt, pepper. Top with chicken and parsley.

Notes

  • Real Alfredo is just butter, Parmesan, pasta water - cream is American addition.
  • Take pot off heat before adding cheese to prevent clumping.
