  1. Crust: Pulse flour, sugar, salt. Add butter, pulse to pea-sized. Drizzle ice water, pulse until dough forms. Divide, flatten, chill 1 hour.
  2. Peel, core, slice apples. Toss with sugar, flour, spices.
  3. Roll one disk to 12 inches. Fit into pie plate.
  4. Add filling. Dot with butter.
  5. Roll second disk. Place over filling. Trim, crimp edges. Cut vents.
  6. Brush with egg wash. Chill .
  7. Bake at 425°F for . Reduce to 375°F, bake 40-50 more until golden and bubbling.
  8. Cool 2 hours before slicing.

Notes

  • Mix apple varieties for balance.
  • Cold butter = flaky crust.
  • Must cool or filling will run.
